Bouillons first appeared in Paris at the end of the 19th century. At that time, workers were looking for places where they could eat a hot meal quickly and without breaking the bank. That's when Pierre-Louis Duval, a Parisian butcher, had the idea of opening an establishment serving bouillon (a meat soup) accompanied by a few simple dishes. It was an instant success.
Soon, other bouillons sprang up all over the capital. They offered not only soups, but also full meals, always at modest prices. Their elegant decor, often inspired by the Art Nouveau style, created a warm and popular atmosphere, attracting both workers and the bourgeoisie.

In 1906, Édouard Fournier opened Bouillon Julien, a true gem of Parisian Art Nouveau. Sparkling mirrors, plays of light, colorful stained glass windows, pâte de verre panels, moldings carved with plant, female, and animal motifs: every detail celebrates the beauty and exuberance of the Belle Époque style.
This place, which one might think was reserved for a wealthy clientele, nevertheless remains faithful to its original spirit. Julien remains above all an authentic Bouillon: a popular restaurant, accessible to all, where the refinement of the setting is combined with the simplicity of good French cuisine.

A true Art Nouveau gem, Bouillon Julien, opened in 1906, is considered one of the most beautiful restaurants in Paris. Every detail bears witness to the skill of the artists of the time:
- Master glassmaker Louis Trézel created the four famous "flower women", symbolizing the seasons, represented in sumptuous glass panels.
- The Guild of Saint Luke, an organization of artists and craftsmen led by British designer John Whelan, rediscovered the original color of the walls: a celadon green, typical of the Art Nouveau movement.
